I used a VTOL nozzle at the very nose tip of the fighter, and then scaled up the exhaust size/plume as well as colored it (requires xml modding tool Overload).
Although honestly I think the F-104 is a beautiful fighter, and a good one when used right. Designed as a pure-bred point-defense interceptor, but many NATO countries used it in low-altitude fighter-bomber/attacker roles (I'm looking at you Canada and Germany), thus the high number of mishaps and airframe losses.

Well transparent blocks are possible in the game via the X-ray mod or the multi-select tool of the Fine Tuner mod, so making a dedicated transparent fuselage block shouldn't be too hard.
If anyone needs some cheap fighters Rainier has a batch of F-104SM Super Starfighters
available for purchase and their US-export friendly. Basically F-104S's but modernized (hence the M) and upgraded to 4th gen standards, avionics and weapons wise.

It does look pretty good. I think I'm gonna try my hand at more low-part count builds but without the challenge restrictions, meaning they can be real lean-mean fighting machines.
I use either my Discord server or Steam for image hosting, although with Steam I can only show the raw screenshots from the game whereas Discord I can upload edited images.

You need the Overload mod so you can easily xml-mod your builds. Also, here is a helpful xml-mod cheat sheet.

Now with drones, this flying aircraft carrier concept is even more feasible (DARPA is doing it with Gremlin drones and a C-130 as the carrier).
