I don't think differential thrust have anything to do with roll, it is to make you don't cheat lol.
Roll at high aoa is tricky I'm not fully understand it yet.

Actually, engine's exhaust color are the same as this plane but SP patch 1.11 ruined the look of the exhaust somehow.
So, to further solidify the point about stability, I'd say there are 2 difference things working together.
For example, PitchRate RollRate YawRate are for dampening unwanted movement, angle of attack and angle of slip are for limiting said angle so the plane will not stall and control surfaces remain functional, angle of attack and angle of slip are not needed if the plane is already hard to stall.

Joke aside, RollRate, YawRate and PitchRate are holy trinity and they are the first thing I've learn in building Funky Tree plane, they make so much difference by taking the burden of correcting unwanted movement away from the pilot.

The thing is airplane will have it's own critical AoA, exceeding that AoA will result in stall so the most important thing is to not exceed the AoA limit.
AoA apply to pitch axis only, yaw axis will have angle of slip instead, it's the same thing but on yaw axis.
Rolling alone can't stall the plane and yaw is almost always stable because the plane have rudder so it's the pitch axis that need focus.
I've noticed that you use RollRate and YawRate but no PitchRate?
You missing out big chunk of fly by wire I think.
PitchRate can dampen your unwanted pitch movement so the nose will more or less stay where you left it.
Maybe adding PitchRate in elevator and canards and tvc the way you add RollRate and YawRate.

If you want to get into it, start with Zaine's plane will be good because the code isn't too complicate.
Or take apart my very old plane.
The thing is the plane must PSM-able first (somewhat unstable like Zaine's explanation about red and blue ball), adding thrust vectoring alone don't guarantee PSM.

I think you'll need to know general concept such as wing loading and CoM and CoL because that's what make or break the plane.
TVC help in one area only, to control the plane where aerodynamic control surfaces are not effective. (or when you don't want to use any control surfaces.)

Loaded roll is basically changing the plane velocity vector rapidly (more than just normal turn) so it spoils gun solution. (or just move out of the way of the bullet while they are on the way)
Other PSM is just trading energy for nose position so that combine with hi-tech missiles work very well.

I think yaw on the X-02S is closer to snap roll if any, idk I've never research about it that much.
It happen because of the dihedral angle of tails and canards rolling the plane when angle of slip is introduced and it's too much for the plane to correct this roll.
I guess the body proportion is not an issue here, this is pro level in my eyes.
Also, I think it'll be funny if she have to constantly balance her head to prevent her hair from falling off since it's unconnected-grey.

If you want to accelerate realistically you need physics.
So not only you need to make the thrust force right (F), you'll need to make the aircraft weight right too (m) to get the acceleration right (a).

Having pitch rate, roll rate and yaw rate correction change depend on airspeed I see.
