The fly by wire keep you from exceeding a danger angle of attack, it force you to fly normally in an otherwise unstable plane.
There are Supermaneuverability mode which allow you to do stunts, more details in the description.

I'd say Funky-tree is a subcategory of xml editing, FT focus on "input" property of the part.
Most if not all FT will be used in rotator and/or control surface and work together with the aircraft to create the control system.
You already know xml so FT will be at your disposal eventually.

All you need are an unstable plane (plane that flip out of control with a slightest input), Funky-tree control system and thrust vectoring engines.

Basically you need to learn Funky-tree and aerodynamics especially static stability because you need an unstable plane in order to stall easily and you need FT to keep that unstable plane fly normally.

Supermaneuvrability is it's normal flight characteristic but FT limit it to fly normally and can be toggle off when needed.

AG:1 is all you need, activate it and pull up sharply and then lower throttle to 55-60% for hovering.
The rest is practicing, it fly like a VTOL but Pitch for Pitch ,Roll for invert Yaw, Yaw for Roll. (hope that make sense lol)

In the mean time you can just take apart Pietro's craft to find some useful Funky-tree code because it is less complicate than mine.
Also Pietro's craft is where I've learned Funky-tree from.

I saw your video and I can't stop myself to do the "Yukikaze takeoff" too.
I just added a car engine to my Morgan to make taxiing easier.

It should work right out the box, unless the target is out of firing cone or your game is so old it doesn't have Funky-tree.
Edit: You need to lock on to the target.
