There is an interesting case of BF-109's spring loaded slats, when rolling left the left slat deployed but only when the plane is pitching up, it's because of the left wing experience high aoa due to combination of airflow from the front and from the wing moving downward.
idk about SU-27, maybe slats are unnecessary for roll because the main purpose of slats are to prevent wing from stall due to high angle of attack.

You can manipulate drag and/or thrust but I recommend setting thrust to desired value first and manipulate drag until you get the desired speed.

This plane was clearly craft with love and care and I feel it in the flight model as well as in the build quality.

All that left is cockpit, railgun and livery.
Only thing I know about cinematic is that if you put camera in place that irl camera can/would be, it'll automatically feels real.
And the stunts routine reflected irl stunt so this look even more relatable to the real world.

Those shapes is a character such as ○ ◊ □, you simply copypasta them in the label.
And for the text, it has tags to tell it's property like html tag.
ex. <rotate=180><size=1.7px>abc</size></rotate> (your "abc" will be resized to 1.7 pixel and upside down.)
For position there are <pos=0px> for horizontal and <voffset=0px> for vertical, you can use {Funky Tree formula} instead of 0px to make it more fancy. (<voffset={VTOL*AngleOfAttack}px>)

When pitching and rolling at the same time, it's not a lag or anything, it's just because of roll input cancel out pitch input on one side so the result is just one control surface deflecting which is not ideal for an intended pitching + rolling motion. (You can try this with paper airplane)
Just try to edit the proportion of pitch and roll so it'll not cancel each other out like this.

I guarantee that gyro sight is possible because I've successfully built a calculating gun sight for my SU-57.
Gyro sight is just a tiny bit simpler than the sight on my SU-57.
The thing is I can't guarantee that I'd make one, the way it's reticle move is just too complex for me right now.
