lol am I really too hard on myself? (night vision is a well known technique to the community btw) My modelling skill is not the best so I use Funkytree as a selling point, my aircraft may not looks amazing but I'll make sure it fly amazing.
Idk if you have build in mod like overload and finetuner, if you have it you can do Funkytree.
Or you can directly edit Funkytree in xml file too but thats painful lol.
About pitching down problem you can edit xml in the control surface, reduce min or max value depend on which way is pitch down.(like max=1 min=0.2)
So it will have a lot less pitch down power and hopefully not enough to flip your plane.

I suggest disable aircraft collision for all of the landing gear parts because when you retract it get crushed into the fueslage and SP physic can get really wierd from exactly that. (like magically push your plane noes down)

Just to be clear they don't just make two version of the same engine, the engine is same one but they use difference gearbox to make the propeller turn the opposite way which is more practical since the engine have reduction gear by default.
And sometimes changing gearbox is too costly they just put the same engine in so both propellers turn in the same direction.

It is indeed launched but launched by setting AG:3 to the pylon.
You can set any AG to a pylon and it will launch any weapon attach to them.

All this just to imitate real life where control surface is unable to fully deflect due to high IAS.

I'll assume you know what is angle of attack. (angle of slip is just angle of attack but sideways)
All plane have it's own danger aoa that if exceeded the plane will stall, some are so stable it never exceed danger aoa even when full pitch is applied.
All you need to do is keep aoa in check by using (AngleOfAttack/x) on control surfaces that control the Pitch.(same goes for angle of slip but it is not as important)
That's it.
The rest is build an unstable plane and use the code.

Joke aside, It will be a lot better if you cast funky-tree magic onto thrust-vectoring engines too. (similar if not exact same spell as of elevator and rudder) And it will become PSM capable magic fighter!!!!!

To yaw the plane easily you need a smaller rudder but doing that will compromise your yaw stability.
Or you could make rudder super strong that it will overcome yaw stability.
