From the tutorial in the pinned forum post I connect the missile part to the underside of the detacher, the tip of the fuselage part to the side of the detacher, and the top of the detacher to the hardpoint. Zero mass, zero drag, no collisions for all parts except the missile part
Simplest way would be to add something like & VerticalG < 9 to the input of each control surface. I've never done one myself so I don't know how smooth it would be but in combination you could incorporate a scale factor based on airspeed so the control surfaces deflect less when you're going faster.

When you take a snapshot on the upload aircraft window, switch to the view that has your thumbnail (top, left, etc.) and take your snapshot.
