For me it usually happens with the cockpit, because it so much work for not much of a reward. Although, I definitely enjoy planes a lot more when they have a cockpit, so that's why I do them
Set the engines to have the accurate amount if thrust
Reduce drag until you get the accurate you speed
If the plane goes supersonic, drag increases at transonic speeds and decreases as you get above the sound barrier. So drag modeling for these aircraft might be difficult

Using fine tuner, you can scale the plane down and include scale mass, then you can scale it back to 1:1 and untick the box for scale mass.
Every part will scale its mass according to its individual scale so smaller scaled parts will scale even lighter, and parts that are already mass scaled will be reset and scaled according to how big it is.
@Phoebe Adding negative mass isn't really a good idea since it makes a force in the opposite direction to what it would usually go in, so gravity is less effective (it won't act like 9.8ms-1) and it makes things work weirdly with inirtia and stuff.

With the landing gear, I'd make the bottom of the cowling square instead of curved to make the struts behind straight, and attach the landing gear to them. Either that or give it landing gear like what the 103 Solo has.

The yaw... no. Planes do not fly like boats in water. Irl the rudder just points the nose in a different direction and the palne files sideways, and doesn't make it turn hardly at all.
Pro tip. This can also be done by placing a part in the middle of the circle which connects to both the main plane and the panel, and rotating the centre part using connected parts and mirroring only the panel to make duplicates (helps to have two sides or having it in the middle. If that doesn't make sense, do it the hard way like I do in the video.

Speaking of which, stargazing in the last half hour, I have seen 2 satellites just next to each other, the latest starlink launch pass over, and the ISS heading northeast :D
