you gotta make sure the missile piece itself is attached to the detacher. one way to do this is have two detachers (one for the custom missile and another for the normal one inside it).
Well, setting it to 0 can make it have glitches when the aircraft crashes (as in the engine could fall through the ground). Set it to something like 0.001 or similar. For weight, have you checked to see if the scales were applied? It's as simple as adding a part and removing it, because that's one way to do it.
