Some of these options are weirdly specific. You list the 109K4, but Spitfire is just "Spitfire" despite the wide assortment of armament, engine power and even wings used. Also, why no Soviet fighters? Yakovlev and Lavochkin had excellent designs, easily a match for western aircraft. You should probably add at least 2 Soviet birds (and maybe an Italian one?) and restart it.
Downward thrust equal to the mass of your vehicle will allow you to float.
Using and understanding how to control gyroscopes will provide stability.
Additional thrust in the desired direction will allow you to move around, but be careful to keep yourself rightside up or you will lose your downward thrust and fall.
On the other hand, you could use massive wings that are XML modded to be tiny, hidden inside your vehicle. In such a case your vehicle would soar like a plane, but not appear to have wings. XML modded airbrakes would allow you to stop and briefly float in midair, but only for a short amount of time.
@Minecraftpoweer Yeah, try setting the weight modifier to 1 on all the wheels and springs. I know that sounds tedious, sorry. Let me know if you try it how it works out.
That weird jittering? Have you modified the weight of the wheels or springs? I get bugs like that when I mess with the weight of any moving part (jet engines, rotators, pistons, etc)
The thing looks awesome climbing over those obstacles, btw. Very cool.
You're a solid contributor. It's a bummer you gotta take a break, but it's also important that you take one. After all, if it stops being fun then you might quit for good.

Realistic wings require a lot of work. Everyone has their own way. The best way for you to learn is to download so highly rated planes, decide qhich ones you like the best and take apart the wings to see how they were made.
With regards to wing flex, you need to XML mod structural wings to allow control surfaces and also "disable collisions."
That being said, many people "fake" the visible wings and hide tiny modded wings inside the plane somewhere.
The most prolific builders on here are usually the most supportive of new players. When white and copper players upload something that shows promise, the first upvote is usually from a gold or platinum user. I tend to give feedback, (move the back landing gear forward, usually), but I also try to tell them my favorite parts as well.
Once people go gold, then I start being a bit more choosy about what I upvote. I figure that by gold, they've got people that know them and support them, and more importantly they know whats what.

Fuselage blocks with mass set to x0.01 and collisions disabled.
Rotators, wheels, pistons and each engine type with collisions disabled.
And finally, reflective paint.
