The pistons simply push the stick to the side, thus rotating the bar that is attached to it, and then each of the "Rod systems" go along with that bar, and they are either pulled up, or pulled down, thus changing the angle of the surface @Mattangi2
Yout COG either needs to be more forwards, or you need to move the main wings back some.... the relation between the COG and COL on this craft isn't too good
And 17ft long by 8ft wide I would assume?

Hmmm, I've built one before but I lost it....... you could try angling the entire rotor slightly backwards and see if that works
