@Mmdben Finally I see! Thanks for the illustration! But it depends on the choice of your path. You can go full speed even when you start from the ocean side reaching up to 270 mph, the car is still perfectly safe as long as you choose the path alone the right side of the small bulge. The vehicle will fly smoothly like a leopard. And when you choose to "jump" from the loess road, the car can be easily destroyed, looking pretty much worse than the one on the picture.
After all the characteristic differences between the cars are beyond a glance. Don't ignore the newly-added small wings on the rear. And the tweaks of the existing wings are also working behind the screen.
The new gen is better at the most needed part, but there might be some other shortages that need a new strategy to compromise. I want to make good cars, but I don't think being good and being indestructible are fully equivalent. Compromise is part of the game and sometimes it might be the most fun part.
@Mmdben I tried to reproduce the scene in the wild areas of Wright Airport and Bandit Airport, and the green jumping platform of Sky Park City as well, but the flip didn't seem to happen.
The Block 2's suspension springs are overall stiffer than the original Mk. 3. I guess this might be part of the cause of your impression.

To change tyre size without game UI limitation you could install Overload. It helps you edit many block parameters within the game.

And there are some other designer mods on the SP website. You could choose the ones that fit you.
The SP builds are stored as XML files. If you want to dig it deeper a tutorial is here for manual editing.
