If this is the one with a landing gear bug, then the problem is that the wheels are hitting the fuselage you attached to the wings. Unfortunately you are on iOS so you can't fix it. You'll need to set the fuselage or the wheels to no collisions, but that involves xml modding. I could try to fix it in a few hours if you want.
Stall physics aren't very accurate but you can stall. If you give your plane large pitch surfaces and make it tail heavy you can stall it by pitching too hard.
I don't know where to place myself on the chart actually, because I only play on pc (steam) but my computer isn't that great and i use an Xbox controller for a lot of games... @DeezDucks
