I think you want this plane to do PSM but can't so you move CoM way behind CoL to achieve that but the thing is the plane became so unstable the fbw barely save the plane.
To stall easily you'll need way higher wing loading (like 400 kg/m2 ++), all plane have a certain aoa that if exceeded it will stall and low wing loading plane have way higher critical aoa than other so it'll refuse to stall even when you pull hard.
CoM and CoL will plays big role in stability so you need to set them right first and you set other things around it, in this case instead of you making the plane super unstable in order to stall you should increase wing loading by remove a nice chunk of wings and add more weight.

Ultralight characteristic have to go.🤣
I'm sure sometimes those P-factor in your build get unnoticed because it is so gentle (I haven't notice it in your AN-2 at all) and a simple kick to a rudder will fixed it no problem.

For me I just dip my nose down a bit to create a positive aoa when flying backward, it helps a bit but I'll need more practice.

If my memory served.... that user posted fbw forum and no fbw plane follow after that so I think that time fbw still get unnoticed by the community.
Nice PID, it completely smooth out the controls.
I reduced the speed of rotators in the canard and it reduce the "spazz out" by a significant amount.
But I still don't know how to get rid of that completely.

There are several things that cause the spin (inverted control, inverted correction part in FT code, too much power, etc.) so try eliminating the rotator one by one or you can build and test one axis at a time so you'll know what went wrong and not to be confused by other axis.
And for the "engines were not getting enough air" part, you need to attach air intake to the engine like my plane which there are underneath each engine.

I saw you intentionally "burn" to a certain direction to cancel off some unwanted velocity, it is quite advanced concept and I'd say you getting a hang of it.

I think the canard is too underpower, even though it is active it not seem to prevent the plane from stalling.
But yeah, it looks cool with canards on.
