Yeah thats the best i can do without xml modding making the plane unrealistic. Feel free to modify in any way or just simply lower the rear stabalizer movement off the rotators
For canards I've simply used two rotators attached to one another set to rotate in opposite directions at differing speeds and angles. Messing around with the angle and speed helps to find the desired effects. I'll upload the canard design of my Su-33 if you guys wanna check it out

I added weight to try and match the actual t/w ratio irl but removing the weight should make it handle better.

It does, all u have to do is throttle up and push collective (vtol) down about 3/4
