Yeah, i see some planes have details or textures that may lag some devices or not. They say the detailed planes took a long time to build, did they manage to take a break or they continue to build? I hope that i made a detailed plane :)

Its quite hard and time consuming, most of my details (ships specifically) is at the secondary or the turret, recently i also put pegs for the anchor or mooring...
Your device type please? Is it hard depends on the device you opreating on.
The best planes are in the 300-700 part range, so that all devices can use them, at least in my opinion
Whilst you don't really need to take 300 hours to build a plane, you can learn detailing fairly easily. It's not hard, and taking breaks is encouraged because incessant work can lead to fatigue.
My Cessna 180 took 300 hours and 4 months to build.
