Stealth as in what? It is possible to make a plane untargetable for missiles, by adding a ton of extra blocks, that fall off with a detacher at the beginning of the game. (I forget how many, but I think it has to be at least 2/3rds of the total build part count)
This will trigger the aircraft has been critically damaged, without actually damaging you, makijng you untargetable, and thus “stealth”.
However, for real stealth, not really. (Although there may be ways that I have not heard of)

Add rotators. Make lots of little wing segments, with rotators in between (input disabled) and set damperMultiplier to 10000 or so on each rotator. That will give you some wing flex, customize it how you want.
