Yes, it does affect something.
Though I would not recommend doing your CoL on top of the CoM as it will be too unstable. An active stabilization system would be necessary
If you are referring to the gray colored bottom then you should probably check one of the planes that you posted. It has what you are looking for, just in red.
Plane is nice, but for future builds I'd recommend posting a screenshot of the actual build as the thumbnail instead of a photo of the real life aircraft
I can definitely say that your remasters are much better than the original ones, tho I'm a bit perplexed on why you used the old default cockpit instead of the 1 part glass cockpit on your Mig-21
Roll + Pitch is the simplest way
You can also do clamp(Pitch + Roll,-1,1) if you want
Remember to turn turn Roll to -Roll on one side to make the roll rotators work properly

@derlurje I did it for my Stealth fighter first, but then I decided to add it here because I got bored
working on the HUD thing was the most painful part of this experience and I will 100% definitely do it again
