Ok. Well, first off, what platform are you using? The cloud might have made a back up of the app. And of course, you can still download all the planes on your profile.
Try restoring it from the cloud, or downloading the planes on your profile to your game. If that doesn't work, there is another way. Get your phone and put it in the microwave. Set the time to the negative number of how long ago you deleted simpleplanes in minutes. The heat will make the phone work better so the negative timeset can cause the CPU to travel through time to get your data back. Trust me, it may sound crazy but it defidentally works. I accept to legal responsibility for the possibility that your house burns down. :)

Slap the closest mobile device you own in the microwave and set the time to the binary code for MOD. And there you have it, your very own simpleplanes mod. If you're a true modding pro however, make sure to also include your PC in the ritual.
