You’re getting a lot of “airworthy” help here, which is fun to watch. You’re free to download and reuse the simple StarDrive engines posted on my link. The engines are simple to copy and reuse. I’m about to test @SledDriver version, they are easy to fly, yet tricky to replicate on the simple iPad I use.

Also add more wing area but still keep the CoM in front of the CoL
Well firstly you have to put the CoM in front of the CoL. I would also reduce the weight putting in less fuel. Try a weightless fuel tank maybe. I got it to fly a lot better than it did when I first downloaded it. It looks great btw!
Try to ask SledDriver or Spefyjerbf. They know how to build spacecrafts.
