I've got a plane that flys pretty well, however it only does this when the trim on at minimum. Would there be any way to have the trim pre set at minimum?

Yeah I managed to make it work :)
adjust weight balance or add a small value to elevators
Try turning off trim and set the input to Roll+0.5. You can change the 0.5 a little bit to dial things in.
