After making this post, I soon learnt that you make italics by doing <i> before your text.

You can enable italics using the <i> tag. The labels use TextMeshPro rich text. You can read more about what formatting options it supports here.

Also, I got your bug report about the gauge needle emission. You can adjust material emission via the paint panel.
