If you move the rear landing gear forward so that it’s just slightly behind the CoM line (red line), it should actually rotate and take off at close to the correct speed (under 200 KIAS).

Make the wings bigger, that would lower the wing loading and make your dragon fly like it should.
Sure, it looks great! I would change the canopy color so a super glossy light blue though
