TutorialPlanes don't do this to me, infact they are extremely peaceful, while the twin prop does crazy attempts to kill me so it might just be that AI could have different AI programming for airplanes that are randomly selected.
I don't know I have seen a couple planes flying around with this AI. such as the twin prop it has this sorta destructive behaviour. So maybe it's just that some people will have some planes do that, I don't know why.

I should probably help. So uhh, like make the wings bigger, the wing loading is horribly high. to like remove the fuselage pieces on the wing as well. Just in case you didn't realize, um smol wing = bad plane
Making custom landing gear is super simple, you get a hinge rotator. Then press the XML button, on the "Scale" value change it to "0.5,0.5,0.5" ( you can use smaller values like 0.3). There step one complete, you now have a small rotator
@ChisP In XML go to the "group" and on the input section write " FireGuns " instead of an activation group number.
