Well, do you get a warning that says "Engines Overspeeding" or something? If so then lower the amount in the fixed.
As for guns, if they hit a prop, the prop explodes. To prevent this move the guns. Or disable collision.
As for anything else, make sure the props aren't hitting anything like part of a wing of fuselage, etc.

Download some XML engines that are faster than normal engines, that might make it easier, but it's impossible to outrun the SAMS.
