Use the VTOL control to sweep the wings, press 8 to freeze in the last input position. Use the default angle for low speeds, fold back for high speeds, fold forward for wing-breaking action. Since the transsonic and supersonic speeds don't seem to be modelled, the variable sweep is more a fun feat than a real use. It does impact the way you fly for the different speeds, and you can experiment with a shifting center of lift.
