I had messed up the activation groups, comment and test if it rolls strangly when at high speeds (mobile bug).
This plane is not the most manuverable thing ever, but it is very sexy, and really fast. This plane tops out around 2500 mph at 12,000', and over 3000 mph at higher altitudes. Avg-1 lights, Avg-2 drop tanks, Avg-3 weapons.

If you use a joystick or an external controller, it may need to be reset so that its input value is at zero when your doing nothing.
No, it was rolling on its own. I just roll gently in this plane......unless at low speed.@SteadfastContracting
Rolling at high speed is not just a mobile bug. I had it too. I was able to fix it by making the control surfaces smaller. If you haven't tried it then maybe give it a shot.
