Hey man, when you are making an aircraft, press the space bar and make sure the COM(Center Of Mass) is in front of COL(Center Of Lift). You can play with the COM, closer it is towards the COL the plane will by itself start pitching up. Counter this by putting wait in the front of the plane. I like to use the fusilage part, make it as small as you can and just add weight till it works. Then use Shift and WASDQE to percisely move the parts into other parts to hide them!!
