Hey man, great plane first of all, looks amazing, and has some pretty neat features. The problem is a common one that resides with simpleplanes itself, but with wings, they only have one point of contact with the surface they are attached with. the roll surfaces that are actuated are quite large and catch quite alot of air. As a result, the slightest input or movement in the plane will cause them to wiggle, and then the speed causes it to repeat back and fourth. Try making the surfaces smaller, or make one out of multiple smaller ones. You could also have multiple smaller ones. Hope this helps!
