I always try to make a nicely working sailing vessel without cheating like using the geroscope. Controls are lika allways: Throttle for main sail, VTOL for the foresail. Roll and trim to steer. For the engine you got pitch for thrust and yaw to steer faster. Look at my profile for more of this kind of stuff.
