Same my ME-262 just flips and crashes aswell
when this happened to me, my CoT was in front of my CoM. not sure if it makes a diffrenece, but it worked for me
I suggest going through the ground school as it shows you how to make planes that fly well

@Cubegix do what he said :), also take care about the wing shape and the power of the jet engine, the primary wings should be semi-symmetrical and the stabilizers should be symmetrical
Likely a mass distribution issue. Check to make sure the center of lift is behind the center of mass using the CoM, CoL, CoT view (spacebar).
