Drag and drop the sub-assembly at the top left corner of the screen.
Dont use parts with VTOL inputs. Same with Trim controls. Wing slabs with pitch control surfaces usually have Trim enabled by default, just turn them off

i can answer #3 it affect the relative bouncyness of the vehicle, while dampners help soften the impact, and provide are really useful.
