I just cant seem to build planes that pitch well or have sensitive controls, they're usually pretty sluggish
Place your center of gravity (your main wing) as far as possible from the pitch,and make all your wings symmetric... Like this plane
.....Small control surfaces.....not dead weight or fuel in the fuselage....line up the COL so that is right against the COM.
Use skinny and long pitch surfaces.
