You're on Windows, so yes. Go to C:\Users[you]\AppData\LocalLow\Jundroo\SimplePlanes\AircraftDesigns. Note that AppData is a hidden folder by default, so you may need to enable hidden item visibility. AircraftDesigns contains all of your saved planes as human-readable .xml text files, and you can change the parameters of your parts with any text editor. Simply save the changes in the .xml, then load your plane again in SP to see them reflected.
