@GINGER01 for Android it's the same concept. You want to go to android data find the simpleplanes folder and open the aircraft designs thing. Unity is a tool in PCs to create games
Then exit simpleplanes and open editor.xml then you can see all the goodies you have. If you want to mod an engine press ctrl-F and type engine and find the engine you want to mod and replace the one in max"1" to 3. You don't want to make this number ridiculously high because engine warm up and cool down are frustrating with things too large

Ah ok, your on Windows so you want to go to users, locallow Jundroo and then aircraft design
You have to open the .xml files to access the planes easy to read file.
