I might be too late but there is a tutorial about CoM, CoL and CoT built into the game

it's a lot of trial and error process.
it's also a lot to do with drag management, hidden airbrakes, proper TWR input, center-of-gravity management, and artificially bumping the lift scale to fit it's desired performance.
I highly recommend trying to reverse engineer my planes by copying, understanding, and reapplying it to your builds

@SDmak in very basic terms your mass needs to be a little infront of the lift and the thrust has to be aligned with the mass vertically and horizontally
@SDmak about FT,look at the builds of users you have mentioned
tear them apart,use the code you found in them,learn how it behaves and what can you do to improve it
@SDmak Mostly it's about correct cg placement; thrust amount and weight. When it comes to flight models, it's recommended to use some FT.
Use a well-placed airbrake part with FT to enforce more drag when needed. The further it is from the CoM - the more leverage it'll have. If it's in front of CoM - it'll aid in turning (at the cost of becoming more and more unstable), while rear placed airbrake won't.
The rest is pure trial and error.
