Sometimes when I hit the undo button it reverts to the last time I saved not my last change. Usually it doesn’t but when it does I can lose lots of progress and have to redo part of my build.

yeah i get that but my plane goes from the entire nose finished to not a single part of the nose

This has been a VERY longtime issue.
You're a very recent victim of it.
Just save everytime you make progress on your build so it wouldn't get shat on by the broken undo.
It doesn’t save every part. Basically it saves every 30 seconds or something like that so
It doesn’t save every part you place.
