I was going to make fictional planes but it turns out replicas are really fun. These days, I try to make all my builds VR friendly and mobile friendly. I build all my planes with blueprints, but when it comes to the cockpit, the emphasis is on fun and usability over realism.
Expect the handling characteristics of my planes to be about half way between Ace Combat and DCS. Things will fly a little faster and turn a little better than they probably should in real life, but I try to be in the right ballpark of an aircraft's performance.
